Medicated Biscuits & Gravy

Breakfast is the best, isn't it? It's my favorite meal, right behind dinner. It's definitely a close second. Savory, sweet, both - you can do anything at breakfast. There are NO RULES!!! When I happen to have some extra time in the morning, I love to see what I need to use up and create something around it. This morning, it was these - inspired by King Arthur Flour's gluten free biscuits - these are slightly modified to make them flakier and, well, medicated. These biscuits are surprising : they are gluten free and you'd never know - AND - they are simultaneously flakey and hold up really well with this gravy. This serves 4 people with some biscuits left over for tomorrow :) Or maybe a biscuit BLT for lunch?

Gluten Free Cheesy Bacon Biscuits
adapted from King Arthur Flour
2 1/4 C. King Arthur Flour Gluten Free Baking Mix
5 pieces bacon cooked crispy and chopped small
1 c. shredded parmesan or cheddar
1/2 tsp. garlic powder
1/2 c. heavy cream
1/2 c. coconut milk
1/4 C. thinly sliced green onions (green part and white)
1 egg yolk
Add in cannabis: 1/2 dropper THC therapy dropped on each biscuit with 3 minutes cooking time left.
Creamy Onion Gravy with THC therapy
Fat from fried bacon (approx 1/4 c.)
1/4 c. KAF GF Baking Mix
1/2 onion chopped small
1 tbs coconut aminos
3/4 C. rice milk (or regular milk)
1/3 C. coconut milk
1/2 tsp. chili garlic sauce
1 tbs. smooth almond butter
1-2 droppers THC therapy
salt and pepper to taste
For the Biscuits:
Stir together baking mix, cheese, and green onions. In a separate bowl, mix together eggs, cream and coconut milk. Add the wet to the dry until a dough forms. Turn the dough out onto a lightly GF floured surface and knead 3-4 times. Work and pat the dough into a rectangle that is approx 1” thick. Cut rounds straight down (don’t twist) and place almost touching down on a parchment papered baking sheet. Brush tops with egg yolk. Cook in 400 degree oven for 14-16 minutes. Remove from oven and let sit on baking sheet for 10 minutes.
For the gravy:
Heat the bacon fat left over from the fried bacon and add in onions. Cook onions down for 3-4 minutes. Add in coconut aminos and chili garlic sauce and stir for 1 minute. Whisk in the flour (baking mix) and mix until a nice paste has formed. Cook for an additional minute. Slowly pour in coconut milk and rice milk, whisking as you go to get a nice, even gravy. Finally, stir in the almond butter. Cook for 5-6 minutes on medium low, bubbling away slowly. Drop in 1-2 dropperfulls of THC therapy (this is approx 15-30mg, dose responsibly) or more and salt and pepper to taste.
Spoon over your warm biscuits and have an amaaaaazing day!
Cannabis note: You can leave the cannabis out of the biscuits themselves so they can be gobbled up with abandon. If you do use THC therapy in both, please watch your dosing and medicate responsibly :)
